So, if you have read or seen any rendition of Jane Austen's Pride and Prejudice you are familiar with Mr. Wickham's "infamous elopement" with Lydia Bennet. The question for today is: Why did Mr. Wickham choose Lydia in the first place? Was it to get revenge on Mr. Darcy? True affection for Lydia? Hmmm, food for thought. We would looove to read any thoughts you might have in the comment section :)

Scotch Shortbread
100% delicious with a cup of tea!
Cream thoroughly
1 cup butter
Add gradually, while beating
1/2 cup confectioners' or light brown sugar
Sift together
2 cups flour
1/4 teaspoon salt
1/4 teaspoon baking powder
Add to the mixture. Mix well and roll out 1/4 inch thick. Cut in squares or rounds. Prick with a fork. Bake at 350 until delicately brown (20 to 25min). Makes 24 or more.
