I think that these sound very yummy and easy. Some of my favorite variations on shortbread are to add some lavender, rosemary or lemon zest. I even made a lemon & pepper shortbread cookie once. My first taste of lavender in food was in Newport, and I've loved it ever since. I've used it to make a simple syrup to flavor my iced tea, lavender ice cream and lavender beer. My favorite though, is lavender shortbread cookies :-)
